Hun hyperlokale focus leverde de zaak al een groene Michelinster en driemaal de titel van Beste Biologische restaurant van Nederland op. Chef Jos Timmer legt uit hoe ze deze hoge standaard aanhouden, maar ook wat de moeilijkheden zijn. “De afgelopen jaren is het weer extremer geworden. Veel neerslag of extreme temperaturen maken het voor ons lastiger om ingrediënten te kweken.&quot;
